What’s for Dinner? Hummus Chicken!

I’m a big proponent of easy dinners, especially on weeknights. But easy doesn’t have to mean plain or flavorless.  Quick, easy and super flavorful, this recipe is the perfect example of that! This dinner could not be easier. Five ingredients and about 10 minutes and you’re on your way to flavor town.

Season two boneless, skinless chicken breasts with salt, pepper and paprika. I season both sides and go pretty heavy handed on the paprika because A and I like things a little spicier, but feel free to adjust the seasoning to your taste.

Add a good dollop of hummus to each chicken breast and spread it out like frosting on a cupcake…mmmm cupcakes. Sorry. It probably works out to be about a tablespoon of hummus per chicken breast, but again, do this to your taste preference.

I top everything with a good amount of paprika, but this step is optional.  This goes in an 375 degree oven for 35 minutes.

I usually serve this chicken with green beans and then a potato of some sort, sweet potatoes are our favorite. The whole thing is spicy and delicious and super quick to make.
